I do not recall when my love for food began — it must have been somewhere in those early years where I spent countless hours helping my mother and grandma cook. Watching, smelling, and tasting how our meals were made from scratch gave a deep appreciation for the effort and care that goes into food.
Somewhere in my 20’s, the opportunity to travel and visit other countries gave me a new understanding of how ingredients, dishes, and tastes reflect the history and values of different cultures. It also opened my mind to new meals that I had never tried, and in a way, kickstarted my passion for new flavours.
New York City. London. Madrid. Mexico City. All of them amazing cities, with impressive gastronomical offers.
Yet Toronto is unique because of its nonchalant diversity and demand.
Speaking of diversity, I want to be transparent with all my readers.
I was born and raised in Mexico, and as such, my palate and taste might be unconsciously biased.
Through my life, I have had the opportunity to discover new dishes and cuisines, but I recognize and want to make clear that my experience with certain flavors might be limited.
In an age of instant gratification and short attention spans, this project aims to highlight the value, time, and hard work behind food and its preparation. To ignite not only your hunger but a passion for the history behind each dish.
